Late tables of Next Door can find Ric at 11.30pm behind the pass into a bucket of chicken wings with beer in hand. On a special occasion he may be halfway through a door stop bacon butty consisting of our house cured belly bacon and fermented tomato ketchup. There have been occasions when lucky diners have gone home with a goodie bag of said bacon.
Although seemingly simple, there is always something a bit special and particularly delicious about these off menu classics. We all joke he has a magic touch with food in every form, even with his children’s salad cream sandwiches.
